Mixing Gear Ratios
 
If I mix some high speed gears with standard gears, or high torque (and I'm not talking about helical gears) with standard etc. is this just bound to cause jams/stripped teeth?

Yes.

Ratio means that the size (diameter) and number of teeth on each gear is changed.

You can try, but it won't work. At all.

I've replaced many a damaged gear set from owners attempting the same thing. Does not work. Gears will either not have enough surface to engage properly (and will probably strip) or are too tightly packed (binding).
