This is from real steel IPSC, so it may not be completely transferable to airsoft... but I sure reload my STI-styled open gun far faster than I can my STI 1911 single stack.

What you've described is 100% transferrable to airsoft, and is a few of the exact same reasons why the High Capacity 2011 platform dominates the IPSC Airsoft segment.
I have a number of IPSC shooters who've purchased customized Tokyo Marui Hi-Capa's from me to replicate their existing build for training purposes. More and more real steel shooters are seeing the value in airsoft guns as a real training tool, and not just a toy.
As for the OP,
It will be near impossible to buy all the parts required to fully assemble a 1911 off the aftermarket, as there are a number of critical parts that simply are not available. It would be easier to just buy a complete pistol as your starting base.
