Rubber knives = fine. I have a rubber training knife I sometimes carry, but to tap a guy on the shoulder and tell him he's dead is way more fun. As for utility knives, I find a decent Swiss Army knife is more than adequate in the field. What I don't get are the idiots I see at airsoft games with anti-tank knives or bayonets strapped on themselves. What's the point in that?
